Procedure

Prepare phase A (without gum and crosspolymer) and heat to 75-80°C. Prepare phase B and heat to 70-75°C. Disperse the gum and crosspolymer of phase A into phase A using a suitable dispersion unit (e.g. Silverson, Ultra Turrax, etc.). Add phase B to phase A at 75°C, homogenizing using a suitable dispersion unit. Cool under gentle stirring. Combine phase C with care and add to phase AB. When ABC is below 40° C, add phase D ingredients one by one. Continue mixing and cooling until uniform and at desired filling temperature.

Properties

(25°C): Appearance—Ivory-colored soft cream; Viscosity—(10 rpm, Brk, RVDV-E, Sp T-C, after 24h at room temperature, mPa∙s): 25000-35000; pH—6.0-7.0.
